Ingredients in Cheeseburger Soup

For this easy cheeseburger soup recipe, you’ll need the following basic ingredients: Scroll to the recipe card at the bottom of the page for the complete list of ingredients and ingredient amounts.

  • Protein: Ground beef and bacon
  • Produce: tomatoes, onion, and garlic
  • Spices: Garlic powder, onion powder, salt, pepper, paprika
  • Beef broth: for the best flavor be sure to choose a high quality broth. To better control sodium and flavor, we use a low sodium beef broth. You can always add more salt to taste if needed prior to serving.
  • Tomato paste: We use a small amount of tomato paste to add an authentic cheeseburger flavor.
  • Condiments: mustard and Worcestershire sauce. Similar to the tomato paste, these ingredients create a true cheeseburger flavor. Don’t worry, the mustard is not an overwhelming flavor.
  • Cheddar cheese:  For best results, grate your own cheese. However, pre-shredded will work fine, too.
  • Cream cheese: this lends to the richness of the dish and makes the texture ultra creamy.

Can This Recipe Be Meal Prepped?

Yes, this keto cheeseburger soup is ideal for ! It’s just as quick and easy to make a larger batch of this bacon cheeseburger soup and split it into portion sizes to last a few days.

Simply cook your soup and allow it to cool to room temperature before splitting into individual portion sizes and freezing or refrigerating (depending on when you plan to eat!). You can store this recipe in the refrigerator for 3-4 days or freeze for up to 3 months.

Can This Keto Soup Be Frozen?

Soup is always a great candidate for freezing, although different ingredients may require specific considerations.

For this low-carb cheeseburger soup, make sure to slightly undercook the vegetables if you know you will be freezing it. This is key if you want to avoid them becoming soggy when the soup is reheated. It’s also a smart idea to leave out the cheese until reheating to avoid it splitting or curdling in the freezer.

For the ultimate in convenience, you can freeze your soup in individual portion sizes. Not only does this avoid wastage, but it will also allow you to simply grab your soup and reheat it quickly and without fuss when you’re in a rush!

Tips for Making Keto Bacon Cheeseburger Soup

  • Make sure to chop your vegetables nice and finely for enhanced taste and a more authentic ‘cheeseburger’ texture.
  • For an irresistible smooth and creamy texture, take your cream cheese out of the refrigerator and let it warm to room temperature before adding it to your soup.
  • Don’t forget your toppings! If you love to load your bowls of soup with fun toppings, you can add additional chopped bacon, shredded cheddar green onions, tomatoes, or pickles!

Prep: 15 minutes
Cook: 2 minutes
Cooling Time 30 minutes
Total: 47 minutes
Short intro to this recipe goes here and looks something like this example, for now I am just going to ramble to fill up space.

Ingredients

  • 6 tablespoons butter
  • ½ teaspoon vanilla
  • ⅛ teaspoon salt
  • 20 ounces mini marshmallows – 20 ounces equals two 10 ounce bags
  • 4 cups Rice Krispies cereal
  • 5 ½ cups Golden Grahams cereal divided
  • ¼ cup mini chocolate chips – semi sweet
  • 2 Hershey’s chocolate bars 1.55 ounces total for two bars

Instructions

  • Prepare a 9×13 inch baking dish with a large piece of parchment paper. Spray the lightly with cooking spray, as sometimes the marshmallows can get sticky.
  • In a very large pot melt the butter over medium low heat. Measure one cup of mini marshmallows to the side, then pour the remaining marshmallows into the pot. Stir the entire time with a silicone spatula while the marshmallows melt. Remove the pan completely from the heat, then quickly add the vanilla and salt.
  • Add 5 cups of Golden Grahams, 4 cups of Rice Krispies cereal to the marshmallow mixture. Fold in the cereal, pulling the marshmallow mixture from the bottom until the cereal is entirely coated.
  • Pour the marshmallow cereal mixture into the prepared pan, pressing very gently with the silicone spatula to fit the pan. Sprinkle the remaining cup of mini marshmallows, ½ cup of Golden Graham cereal and the ¼ cup of mini chocolate chips over the Rice Krispies treats. Spray an additional piece of parchment paper lightly with spray cooking oil, then use it to press the toppings gently into the top of the treats to make sure they stick. Add rectangles of Hershey’s chocolate to the top to decorate.
  • Allow the treats to cool, they slice easier once cool to the touch. Then lift them out of the pan and slice, and enjoy!

Notes

It can be tempting to turn up the heat to melt the butter and marshmallows faster, but keep the heat medium to medium low. If you bump the heat too much the sugar begins to crystalize which can cause the treats to be hard.
